The emulsifying action of egg yolk powder is principally attributable to its lipoprotein content, especially low-density lipoprotein (LDL), which accounts for approximately 65% of its total protein, and its constituent lecithin (representing about 75% of its phospholipid content). Protein contributes significantly to emulsification, surpassing the effect of phospholipids alone. Pasteurization is essential for improving the microbiological safety of egg products. However, egg yolk begins to solidify around 65°C, leading to a substantial decline in its emulsifying capacity, particularly in products with high oil content, such as mayonnaise (which can contain 70-80% oil in an oil-in-water system).
